Syrco BASÈ is more accessible, following Chef Syrco’s recent Two Knives (World Class) award at The Best Chef Awards 2025.
Syrco BASÈ, one of the leading culinary destinations on the Island of the Gods, introduces Pure BASÈ. This new five-course menu brings the Ubud dining experience closer to everyone.
This makes it more accessible and inclusive, while remaining true to the restaurant’s pillars of Traceability, Nature, and Transparency.
“At a special price, this menu celebrates Indonesia’s produce, people, and landscape through a sophisticated yet down-to-earth dining experience,” said Chef Syrco Bakker yesterday.
This launch coincides with a milestone for Chef Syrco Bakker, who recently received the Two Knives (World Class) award at The Best Chef Awards 2025 in Milan, placing him among 236 chefs worldwide honored for their creativity, mastery, and impact on the global culinary stage.
“Receiving this award alongside colleagues I deeply respect is truly humbling,” said Chef Syrco Bakker.
Pure BASÈ represents Syrco BASÈ’s next step in conscious dining, a return to the essentials where refinement meets accessibility. Designed to be enjoyed both alone and in company, this five-course experience captures the flavors of Bali through dishes that highlight collaboration and local craftsmanship.
Guests begin their journey in the restaurant’s garden, learning how ingredients are cultivated, followed by a visit to the Aging Room, where local producers and their work are showcased, offering a transparent glimpse into Syrco BASÈ’s sourcing philosophy.
“This reinforces our goal in Bali: to create meaningful yet accessible dishes, and to demonstrate that refinement and simplicity can coexist when we value the people and produce of Indonesia,” said Chef Syrco Bakker.
Fashion highlights include Savoy Cabbage with green chili koshi and lime, Tomato with almond and garden herbs, Bebek Betutu with taro and chive rosti, and Nasi Ulam, a fragrant rice dish that pays homage to Indonesia’s culinary heritage.
Other creations like Sepia with black garlic and koshi lemon and Hamachi with watermelon and coconut reflect the restaurant’s deep connection with local farmers, fishermen, and artisans.
The experience concludes with a sweet twist with Kolak, a modern interpretation of Indonesia’s favorite coconut and banana dessert, or Chocolate Milk with mulberry and caramel.
“After more than a year and a half of learning and refinement, we wanted to make Syrco BASÈ more accessible to a wider audience, without losing the integrity we hold dear,” added Chef Syrco.
The recognition at The Best Chef Awards further reinforces this vision of connection and excellence. Held in Milan, the 2025 awards ceremony brought together chefs and industry leaders from 69 countries, celebrating creativity and innovation through an inclusive Knife Recognition System.
