The 1O1 Bali Oasis Sanur Launches Timbungan Be Pasih to Preserve Culinary Heritage

“Through its ongoing efforts, PHM Hotels aims to keep the stories and traditions of Indonesian cuisine alive,” added Nyoman Astika.

As part of this mission, THE 1O1 Bali Oasis Sanur proudly launches a special menu that celebrates local culinary heritage: Timbungan be Pasih.

“Timbungan Be Pasih is a traditional Balinese dish that reflects the island’s rich cultural identity,” said Chef Komang Trisnawan.

“Timbungan” refers to an ancient cooking method where ingredients are marinated with a blend of traditional spices and slow-cooked in bamboo tube.

Our version features fresh fish (Be Pasih), prepared with authentic Balinese base genep spices, wrapped in banana leaves, and cooked to perfection in the traditional way. It is a true homage to Balinese culinary wisdom, offering guests a taste of heritage on every plate.

“This method enhances the natural flavours and infuses the dish with a smoky aroma,” added Chef Komang Trisnawan.

This flavourful and meaningful dish is now available exclusively at Terrace Restaurant, THE 1O1 Bali Oasis Sanur.
