CANGGU, balitourismnow.com – Hotel Tugu Bali offers a dining experience that brings together the stories of Indonesia’s spices, the rich flavours of regional cuisine, and traditional dance performances. Guests are invited to discover the diversity of Indonesian food through an evening filled with culinary delights, art, and cultural traditions.
This was the atmosphere at The Nusantara Spice Odyssey, a special dinner hosted at Hotel Tugu Bali in Canggu on Wednesday evening, October 28, 2026. The evening began with a prayer ceremony, followed by a traditional Indonesian dance performance that set the tone for the culinary journey ahead.
Guests were then invited to enjoy a selection of dishes served in several courses. Inspired by ingredients and culinary traditions from different parts of Indonesia, the menu featured a variety of appetisers, main courses, and desserts.
Spices were the common thread running throughout the evening. Ingredients such as nutmeg, cloves, cinnamon, and various types of pepper have been an essential part of Indonesian cooking for centuries, shaping the distinctive flavours found across the archipelago.
But the story of Indonesian spices goes far beyond the kitchen. The Banda Islands and parts of North Maluku, for instance, were once major sources of nutmeg, mace, and cloves, attracting traders from around the world. These precious ingredients played an important role in connecting the Indonesian archipelago with international trade routes and cultural exchanges.
A Culinary Journey Across the Archipelago
The evening’s culinary journey began with three appetisers: Tempeh Jawa Parfait on Black Rice Crisp, Tuna Dabu Manado Tartlet, and Rujak Pesisir.
The Tempeh Jawa Parfait on Black Rice Crisp featured smoked tempeh mousse infused with kaffir lime leaves, served on a crisp made from black rice. A familiar ingredient in everyday Indonesian cooking, tempeh was presented in a fresh interpretation, offering a different texture and presentation.
Next came the Tuna Dabu Manado Tartlet, combining tuna and basil in a delicate tartlet shell, accompanied by a refreshing sambal inspired by Manado’s distinctive flavours.
For something lighter and fresher, the Rujak Pesisir brought together green mango, jicama, rose apple, and pickled torch ginger, all dressed with coconut and lime sauce. The combination offered a refreshing balance of sweet, sour, and aromatic notes.
The main courses continued the exploration of Indonesian flavours, beginning with two interesting rice selections. Butterflied Blue Pea Coconut Rice featured coconut rice naturally coloured with butterfly pea flowers, while Truffle-Infused Nasi Gurih combined fragrant coconut rice with smoky lemongrass and a touch of truffle.
Among the main dishes, Minang Wagyu Rendang stood out. Slow-cooked wagyu beef cheeks were prepared with a blend of Minangkabau spices, offering a premium interpretation of the much-loved Indonesian rendang.
Another highlight was Cumi Woku Isi Tahu, featuring crispy fried squid stuffed with tofu and served with a Manado-style tomato sauce, fresh herbs, and lemon basil.
For vegetarian diners, Vegetarian Gudeg offered a creative take on the traditional Yogyakarta dish. Young jackfruit was prepared with smoked coconut cream and kluwek soil, bringing a different interpretation to this well-known Indonesian speciality.
There was also Truffle Corn Fritters, sweet corn fritters topped with shaved truffle and served with chilli and lime aioli.
To accompany the main courses, guests could enjoy Kerupuk Uli and Sambal Andaliman. The rice crackers added a satisfying crunch, while the andaliman sambal introduced a distinctive citrusy, aromatic character associated with the cuisine of North Sumatra.
The meal was also accompanied by a refreshing drink made with torch ginger and rose apple. Its combination of flavours offered a pleasant contrast to the richness of the spice-inspired dishes.
Dessert brought the evening to a sweet finish with two creations: Banana Cigar with Vanilla Smoke, featuring crispy banana rolls with a smoky vanilla aroma, and Coconut Panna Cotta with Herb-Infused Jelly, a creamy coconut panna cotta paired with seasonal fruit jelly and delicate herbal notes.
From tempeh and rendang to butterfly pea flowers and torch ginger, the menu highlighted the remarkable diversity of Indonesia’s ingredients. Familiar local produce was given a fresh interpretation through different cooking techniques and presentations, while still retaining its connection to the culinary traditions that inspired each dish.
Where Culinary Experiences Meet Cultural Traditions
One of the elements that made the evening special was the traditional dance performance woven into the dining experience.
Guests were not only treated to a selection of Indonesian dishes but also given an opportunity to appreciate another side of the country’s cultural heritage through traditional performing arts.
The combination of food and cultural performances brought an added dimension to the evening. Candlelight, floral decorations, a succession of beautifully presented dishes, and the warm hospitality of the hotel staff created a relaxed and welcoming atmosphere.
One of the guests, Kaiya Puvor, also shared a positive impression of the food, describing the dishes as “good and delicious”.
Although brief, the comment reflected how the diverse flavours of Indonesian cuisine were received by the guests attending the dinner.
Discovering Another Side of Bali Through Food
Bali is widely known for its beautiful beaches, natural landscapes, and rich cultural traditions. Yet, discovering the island does not always have to involve visiting scenic destinations. Culinary experiences can also offer an interesting way to explore Indonesia’s cultural heritage.
Through The Nusantara Spice Odyssey, Hotel Tugu Bali brings together food, history, and traditional arts in a single dining experience.
For travellers looking to discover another side of Bali, an experience like this offers something beyond an ordinary dinner. It is an opportunity not only to taste different dishes but also to learn about the ingredients behind them and the traditions that have shaped their flavours.
Ultimately, spices serve as a connection between the past and the present. Once carried across oceans and traded throughout the world, these ingredients continue to find their way into contemporary dining experiences.
Through The Nusantara Spice Odyssey, discovering Indonesia can begin with something as simple as sitting around a dining table, savouring each dish, and finding a little piece of the archipelago’s story in every aroma and flavour. [ayu]
